Mexican Sweet Potato & Black Bean Enchilada

The secret to any good Enchilada is the sauce –  we make our own Mexican Molé sauce – rich in spices (not spicy) – this becomes the beginning of the deliciousness – add cinnamon roasted sweet potato, cooked  black beans and wrap it up in a flour tortilla, topped with more Molé and toasted sesame.

Bake until bubbling hot & the edges of the enchilada have turned all crispy……remember to serve with fresh coriander and if you not strictly vegan  – sour cream / feta.

Balinese Hake w macadamia nuts

We crossing our fingers we can get hold of fresh hake to make this stunner of a dish this week… a perfect meal in this summer heat. The recipe is inspired from the cookbook from “The Leopard”  – a JHB deli (once restaurant.) The spicy, sweet and fragrant rub we made for the fresh hake fillets is pure genius and sings of the tropics, summer fruits and fun times.

Bake the fish until cooked and serve with basmati, fresh coriander and extra red chilli if you want it extra  spicy. A lovely pineapple or mango salsa would be a wonderful accompaniment.
